I’ve dappled a bit in the past, following a lot of the recipes on @Serious Eats and other publications but haven’t actually cooked sous vide in minute. The JouleTurboSousVide from @Breville works great and the smart tech and app support really makes it a joy to use. For this recipe, I marinated, sous vide and seared some thick cut pork chops in some kimchi paste and served it with a tangy mixed green salad with a kimchi dressing. Full recipe below and on joeycooksfoods.com (link in the bio) Ingredients: • 2 bone-in pork chops, 1 1/2 inches thick • ¼ cup @Mama O’s paste (or a mix of gochugaru with things like minced ginger, scallions & garlic) • 2 tbsp soy sauce • 1 tbsp avocado oil • 4 tbsp unsalted butter • kosher salt Steps: • Marinade pork chops with soy sauce, salt and kimchi sauce in a sealed bag for an hour or overnight. • Set your water circulator to the correct time and temperature settings. I’m using the Joule Turbo Sous Vide by Breville ‘pork loin center-cut chops’ setting which cooks them at 136.4°F for 90 minutes. • Once done, sear your chops in a hot skillet with your butter and avocado oil for a couple of minutes on each side for a nice crust. • I served mine with a sesame & Mama O’s sauce mixed green salad.
