KIKUSUMI X Shinko #5 Japanese Oroshi Polished Copper Kitchen Grater + Ceramic Scraper Set - Medium CRAFTSMANSHIP Kikusumi OROSHI GRATER range of handcrafted copperware is made in Tsubame Sanjo, Japan.   Crafted one by one from a thin copper sheet that is hand hammered to add strength to the metal before it is hand cut into shape.  The copper is then brushed with hot, liquid tin.  Once cooled and set the artisan sets about punching the grater with a special tool that results in rows of raised teeth.  This artisan technique dates back to the Edo period and yields superior grating results.  Top level Japanese chefs know that hand crafted oroshi graters perform better than the polished machine made copies.  The uneven rows of teeth grate ingredients in a way so juices are not separated like they are with machine made copies.
