We are updating our pan preparation for cheesecakes. Since we bake our cheesecake recipes in a water bath to assure a great custardy texture, keeping the water bath water from seeping into the cheesecake pan is necessary. Although a slightly larger silicone pan is our preferred choice for 100% preve.
